Grilled Chicken with Tomato Concasse - Recipe

The name sounds heavy, no?? But trust me, the recipe is very healthy and easy to prepare. This can be made without oil or just a bit of oil to grease the pan. The word "concasse" may be unknown to some people. Lemme, tell you, "tomato concasse" is when we boil or microwave a wet tomato for 2 mins and peel off the skin of it and throw away the seeds.

I cooked this one keeping in mind that now, in every family there are people who suffer from diabetes, thyroid, sugar, high blood pressure and what not!! Chicken is good for health if taken in proper quantity and without spice. So, this approach was made specially for those people, but surely even the fittest person will enjoy this equally. :-) Have a look to the dish, your mouth will start watering :-P :-P



Ingredients:

1) Chicken (medium sized) - 4 pcs
2) Lime juice -5 tbsp
3) Ginger juice - 5 tbsp
4) Salt
5) Olive oil(optional)
6) Garlic frills -1 tbsp
7) Green chilly frills/paste - 1tsp
8) 2 chopped onions
9) Sugar - 2 tbsp
10) 2 chopped Tomato concasse
11) Tomato Ketchup - 3 tbsp
12) 1/2 chopped capsicum
13) Fennel - 1 tsp
14) Parsley leaves/coriander leaves
15) Honey - 2 tsp
16) White sesame seeds(roasted) - 2 tsp

Method:

1) Marinate the chicken with salt, lime juice and ginger juice for 3 hours.
2) Grease a non-stick pan with olive oil, no excess oil is needed. If anyone wants to avoid the oil totally, one can.
3) Cook the chickens for 30- 45 mins in medium heat.


4) Serve them in a plate.


Now, for the tomato concasse sauce-

5) Add garlic frills, chopped onions in the non-stick pan.
6) Add salt, let it melt.
7) Add sugar, let it caramelize.
8) Add the tomato concasse and cook for 2 mins.
9) Add 1 cup hot water, tomato ketchup, chopped capsicum, green chilly paste,  fennel, parsley/coriander leaves, honey and cook for another 2 mins.
10) Add the sauce onto the grilled chicken, spread some roasted sesame seeds and serve.


I was not so sure about the sauce before cooking, but it turned out to be supppperrrbbbb!!! I am just waiting to cook it for my hubby when he comes to Kolkata next time.

Non-veg Rabri Recipe

For those who don't know what is Rabri?? I shall tell, it's a sweet dish, famous in Kolkata. Well, it takes a lot of time as it is prepared with continuous slow heating. But now-a-days we all are very busy no? So, here is a short cut way to feel how Rabri tastes. Well, yah the real Rabri and this one dont taste xactly same, they taste similar. And if someone(like me) is allergic to too much thickened milk, then that person will just love my recipe. It's a very simple and easy recipe. I can guarantee anyone (except that person can't digest milk and egg together) will LOVE this.

One more secret, this is the first sweet dish I made for my hubby, and he loved it, and I was too satisfied when he just kept licking and licking the bowl even after it was finished. :P :P :P Anyway, now to the recipe-

Ingredients:

1) Milk( 1 ltr.)
2) Egg (5 pcs)
3) Sugar (5tbsp)
4) Salt (upto taste)
5) Cinnamon Stick (5 small pcs)
6) Cardamom (4 pcs)
7) Refined Oil( 5 tsp)

Method:

1) Make five omelets out of the five eggs (this is where the salt will be used only) using refined oil.
2) Shred them into pieces(evenly or unevenly)
3) Slightly smash the cardamoms so that the seed in them start peeping, this will add some more flavor to the milk.
4) Then add the cardamoms, cinnamon, sugar to the milk and boil it in slow heat until the milk becomes 3/4th of the actual quantity.
5) Add the shredded omelets to the milk and cook until the desired thickness is achieved. 

And that's it. So easy no? I know.

The end of Unemployment..

Sometimes i have passed some exams with marks close to the lower cut off but never failed in my life. So, I never even can think of it. My days were awfully tensed from 19th to 24th of September during the campusing and even it took my sleep away. It could be so that all my friends were selected except me. But, I was lucky and everything happened to me was in my favor. And on 25th of September, when I saw my name in the lists of final selected candidates, I was just too happy. And believe me, this kind feeling can not be expressed in words. I actually got selected in two companies : Infosys & Wipro. I am going to share the interview questions I faced for the future job seekers:

Wipro:

Technical Interview:

The interviewer was a lady and tried to comfort me offering water and chips. :-) :-) I said "No, it's okay ma'm, thank you' with a smiling face(It is very important that you keep a smile in your face always).It was quiet a long session but I never felt uncomfortable with her. She first took some time while going through my CV and then she asked me:

1) Introduce yourself. Explain the essay( they gave a topic to write on, my topic was: your vision on economic status of India as Superpower).
2) Do you have any idea about data link layer?
3) What is the main difference between Procedural language and Object Oriented Programming(OOP) language?
4) What is the advantage of OOP?
5) What is structure in C?
6) What is the difference between array and structure in C?
7) Write a query to have the full outer join of two tables in DBMS?
8) Do you have any idea about normalization in DBMS? Explain 1NF, 2NF, 3NF. Explain transitive dependency.
9) What is you favorite subject in Engineering?
10) If you are given a chance to choose among DBMS and JAVA to work with, which one you will choose?
11) Do you have any idea about how the business and outsourcing are done?
12) Do you have any gaps?
13) If we want to sign a bond with you with 15000 per month in the training period and then with the full package for 3years, will you accept it?
14) Will your family be comfortable if you are asked to work outside Kolkata?
15) If you are asked to work till 11pm in the night, your family would also want you in the evenings, but if you have to work, then how will you manage?
16) Being a woman, we have so many responsibilities to handle. I mean now you are okay, but after few years say after 10 to 15 years, how will you handle it?
17)In which area will you like to work- hardware/ software/ programming?

Convinced enough with my answers she told me: Dipanwita, according to me, you can now wait for the HR. Thank you.

HR Interview:

It was a very small session, just about two to three minutes.

1) So, Dipanwita, introduce yourself.
2) Please tell what you wrote in the essay.(I cited some situations which are against the free growth of a developing country like India.)
3) What do you think the remedy is?(the remedy for the situations I cited)
4) Dipanwita, do you have any gaps?
5) Are you relocatable?

And that was all... She said: " It was nice talking to you Dipanwita". 
This was all for me with Wipro and then on 24th I had to give the aptitude test for Infosys. I was selected for the interview. On 25th the interview was held.

Infosys (HR Interview):

The interviewer was smiling and friendly which helped me to be very comfortable on the D-day. It was hardly about 3-4 minutes session. The interview was like:

He: So, Dipanwita are you comfortable?
Me: Yes, sir.
He: Okay, tell me something additional to the application form (the only document they went through) so that I can assess you.
Me: Told.
He: So, cooking is one of your hobbies?
Me: Yes, sir.
He: What kind of items you cook?
Me: Told.
He: what did you cook for the last time?
He: So, you try recipes from the reality shows?
Me: Yes, sir, I do.
He: What do you think is necessary for working in a project?
Me: Told.
He: If you are assigned to a project, what steps you will follow?
Me: Told.
He: Ok, It was nice talking to you, Wish you all the best and have a nice day.

Everything went so well, but I was not convinced until the result was out. And what happened afterward, I have expressed already. So, all the best for the future job seekers... :-) :-) :-D

Coconut Papaya..........

After a loooooooooooooooooooooong time, no???? Today I am going to share a recipe, but it's my mom's invention,not mine.. But it was just superb. I am damn sure nobody in this world would dislike it. People who hate papaya for ant reason would definitely start loving it, it's a vegetarian recipe. So, here it is..

Ingredients:

1) Papaya (washed and grated) - a whole papaya..
2) Coconut (grated) - half of a standard sized coconut
3) Cinnamon stick (3 small pieces) , cardamom (2 pieces)
4) Mustard oil
5) Ginger paste (1 + 1/2 tsp)
6) Garlic paste (1 tsp)
7) Green chilly paste ( 1 tsp)
8) Salt (up to taste)
9) Turmeric Powder( 1/2 tsp)
10) Sugar (1 tsp)
11) Ghee (1 tsp)

Method:

1) Heat the oil and fry the cinnamon and cardamom for the nice flavor.
2) Then give the grated Papaya and cook for 5 minutes.
3) Give Ginger paste, Garlic paste, Green Chilly paste, Salt, Turmeric powder.
4) Cook very well till the water that came out from the papaya dried a bit.
5) Now, give the grated Coconut and sugar and cook until done.
6) Spread the ghee, cook for 15 secs and serve.

Isn't it very easy?? Yes,it is. It can be served with rice as well as loaf. I guarantee every one will love it..

Some Recent Collections......


It's monsoon here, super weather with lots of confidence in me. Actually my parents never even imagined I love photography this much. They still keep on pushing me like, do one thing properly, else nothing's gonna happen in your life and blah blah. I stay silent and this is actually a everyday-growing-challenge for me. I wanna show them that I can, and that's giving me a confidence. Anyway, I believe that every successful person has to go through a lot of struggle. So I am in.... :-) :-)

 I don't know the exact purpose of the above seen cute things, but  I guess these are mainly used for decorative purposes. But they are so colorful and attracted me a lot.

 As I said earlier, I am in love with the water drops. But mostly natural ones. And it being monsoon here, I am enjoying a lot capturing these. The purple leaves are of a cactus, many people mistake it to be a flower though.

Some glances of Durga Puja '11

Durga Puja is known to be the most attractive and biggest festival of the Bengali. There are so many stories in the ancient history related to how and why this festival started and when for the first time. For the non- Bengali readers I must mention that for most of the Bengali, this festival is the most cherished and awaited one. This starts with Mahalaya and ends with Bijoya Dashami. The body of the Goddess are made by clay and the structure under it is usually made of woods. Here are some snaps of different sculptures..






The trend here is, many small or big organisations are there who make big pandals for celebrating this festival. Some pandals show the ancient  sculpture, some tell us the ancient stories of different matters ans some show any events. Have a look :

People make this just for four days of celebration.. These acute decorations become famous but we don't really appreciate enough the people who made this possible.
